At Herb & Sea, you can step into The North Pole without leaving beautiful, coastal Encinitas. You won’t need a plane ticket, a thick coat, or warm boots – just an appetite for unique cocktails, festive bites, and holiday cheer. Sparkling lights and Christmas decorations have taken over, and this Christmas pop-up is now a complete winter wonderland.
Herb & Sea
Herb & Sea is a well-known neighborhood seafood spot in Encinitas. It’s famous for working with fresh, local fish and produce, turning the flavors of the coastline into bold and bright dishes.
The magician behind it all? Chef Aidan Owens, who constantly draws inspiration from the land and the sea. As you can imagine, the menu and the plates are seasonal and constantly shifting. Alongside other North County chefs, he leads live fish breakdowns at the Oceanside Fish Market, shining a light on under-the-radar catches and encouraging a deeper appreciation for local seafood.

The North Pole Christmas pop-up
From now through January 18, 2026, the restaurant has transformed into a magical holiday spot. Sip on seasonal drinks and enjoy a limited-edition menu anytime between Tuesday and Sunday, 5 to 9 PM. It’s walk-ins only, so no need to pre-plan. Show up and enjoy the vibes!
Christmas cocktails
The North Pole at Herb & Sea features a special drinks menu, with 10 creative and unique cocktails to choose from. Here’s a little peek:
- SLEIGH BABY SLEIGH – elderflower, fig, orange, prosecco, soda
- THE POLAR ESPRESSO – olive oil & lime leaf infused cachaca, cashew orgeat, espresso, cinnamon, miso
- PEPPERMINTINI – vanilla infused vodka, bailey’s, creme de menthe, peppermint
No alcohol? No problem. Two festive mocktails, such as Grinch eggnog, are also featured on this menu.
Christmas bites
- HAPPY MEAL (5-6 PM only, limited quantities) – the crowd favorite – 1/2 burger, three oysters, frites, bubbles
- SHRIMP COCKTAIL – smoked cocktails sauce, chive
- ICE CREAM SANDWICH – GIngerbread cookie, cranberry & orange
