With over 20 years of experience, and thousands of slices flying out monthly, they clearly know what they’re doing.
What’s Regents’ story?
Chef Stephen Carson became the 3rd owner of a restaurant called Regents Pizzeria in 2005. However, things weren’t looking exactly bright. It was a small place, with a similar menu as the one you find today, but the chef thought it lacked authenticity, quality, and the overall aspiration he envisioned for it. By this time, he had nearly 20 years of experience as executive chef.
To bring his vision to reality, Chef Carson worked every single day, for 2 years, with no salary. You can only imagine the type of dedication that takes. But, his hard work paid off – the success of Regents is in the numbers and the many reviews from happy customers.
Unfortunately, chef Stephen Carson passed away in 2011, after battling cancer for two years. His legacy, however, will forever live through the authentic menu items, the amazing flavors, and the service you enjoy at Regents.
What’s the best pizza slice at Regents?
This San Diegan pizzeria promises to delight “by providing the ultimate, authentic American craft pizza and beer experience“.
If you love a good New York slice, you have over 18 options to choose from. Two of those options are monthly specials, made with seasonal ingredients: get the Trustfall (made with butternut squash and fried sage), or try the Monster Mash (with rustic mashed potatoes, Zoe’s applewood, and smoked bacon). Looking for a classic? People looooveee the Brooklyner and the Sopresata. You can event create your own pizza, if nothing sounds quite like the perfect slice.
If you’re more interested in their Chicago pies, a fan favorite seems to be Popeye – with an aged mozzarella blend, spinach, artichoke hearts, ricotta and parmesan – we can totally see why. This month’s special is the “Top Down Ma’s Spicy Lil’ Meatball“. You can probably guess the main ingredients in that one.

However, there’s a lot more to Regents besides their delicious pies. First of all, they’re very well known for their craft beers variety. They have over 30 special beers on tap! Of those , 28 are traditional, 2 are nitro and 2 are cask conditioned. Downright heaven for every type of beer lover, who’s guaranteed to find their flavor profile in one of these brews.
They’re also known for other delicious dishes on their menu; word out there is that the chicken wings and buffalo cauliflower are really solid. Don’t forget to try the garlic knots, too. Happy eating!
