What to expect at 3-Michelin-star Addison

Located within the Fairmont Grand Del Mar resort Addison has been an example of culinary excellence since 2006. For nearly 2 decades, Chef-Director William Bradley has helmed the kitchen, developing a culinary philosophy he calls “California Gastronomy.”
At Addison, Chef Bradley combines French technique with locally sourced, super-seasonal California ingredients. Occasionally, you’ll also notice nods to global and Asian flavors. The multi-course tasting experience (10 courses) impresses diners with clean, but refined flavors. Standout signature dishes have included chicken liver ‘churros’, shellfish chawanmushi (Japanese egg custard), and a true show stopper: Regiis Ova Reserve caviar with koshihikari rice, smoked sabayon, and sesame.
Equally important to the Addison experience is its impressive drinks program. A glass-shrouded wine cellar sits at the center of the dining room, keeping the restaurant’s fabulous collection at the forefront of the meal. Lead Sommelier Kyle South curates pairings, heavily featuring special California vintages, and a collection of rare grower champagnes.
